Carrot Cupcake with Cream Cheese Frosting

Yesterday, I made carrot cupcakes. My six year old daughter’s best friend was coming over to play and I wanted to make something special for the quatre heure (snack time at 4 p.m.). I found a great recipe on Joy of Baking.  I followed the recipe closely but I did add a little more cinnamon and vanilla to the cupcake batter.  

I added two teaspoons of cinnamon and one tablespoon of vanilla (the only clean spoon I had nearby at the time).  

As soon as I tasted the batter, I knew these cupcakes were going to be delicious.

I bought some cream cheese this past Saturday while we were in Bienne.  I can’t find it in the small grocery we have in our village.  Armed with my cream cheese, I dove into the cream cheese icing recipe which is found under the carrot cupcake recipe on Joy of Baking.

It was a success!!!  Simply yummy.  

This is the first time I have made icing that we didn’t have to throw out because my six year old wanted to throw up eating it!  Instead, she asked for more.  :)

    Oh, I simply adore carrot cake! But like you, I enjoy a little spice in mine.
