I, finally, talked Vilay into buying a muffin pan. He isn’t big on muffins or cupcakes. I love muffins and think cupcakes are perfect for school birthdays.
This morning, I had to break in the muffin pan! So, I made homemade cupcakes while the girls were at school. Only problem is that I can not make icing. Each time I have tried to make homemade icing I have failed miserably.
Any bakers out there who have a good icing recipe they would like to share? :)

Uh, just mix powdered sugar with some lime juice and water…?!
Nothing more easy, you can’t mess it up.
I would like to try a kind of drizzle on the cupcakes when I need something fast and easy. I think your idea is a good one.
That’s cookie icing- it wouldn’t work on cupcakes- and you need milk, not water, a drop of vanilla and some melted butter to mix with the powdered sugar. And that stuff is sooooooo sweet you’ll go into a diabetic coma!!! My friend has a buttercream recipe by which she swears (I hate buttercream- tooo sweet, too!) I’ll see if I can get it for you. She also has a nice ganache one, but like the powdered sugar icing, it’s too thin to be cupcake icing.
I don’t like a lot of butter icing either. I think it is too sweet too but kids love it! I like cream cheese icing and am going to try that next. I would love to have any recipes you can get. Thank you. :)
Love your macro shot! Add a bit of maple or almond extract to the powdered sugar and water for more flavor!
Oh and yes I saw the yoddle button yesterday, too funny!
I am still trying to get the hang of my new camera but I am beginning to feel like it a part of me. Macros shots are the hardest!
Homemade cupcakes are essential and perfect for birthday parties..especially for girls :-)..a good idea would be to read some Cup Cake blogs, they are out there.
You will have loads of fun making them again..:-)

I LOVE LOVE LOVE cupcakes!!! And I agree, they are perfect for children’s birthday parties (in fact, I am making some this week for Little Man’s big day).
As for the frosting…I do a traditional buttercream. But I too don’t like sweetness, so I usually make a citrus or chocolate version. Choc is my favorite for yellow cakes. I add unsweetened cocoa powder to powdered sugar, butter, vanilla extract and milk. If I am out of cocoa powder, then I use melted 85% dark chocolate. It makes a frosting that has a rich, but not sweet, chocolate flavor.
