I used to think that mayonnaise was pretty weird in a cake, but if you've ever made mayo from scratch, it's not so weird! Eggs, oil, vinegar (helps the baking soda get fizzy, so it makes the cake lighter, although I don't know if it works in this case, where the vinegar is already in the mayo). Anyway, it looks delicious and special, which is how I hope your birthday is! Happy birthday, Pumpkin!!!
